Pineapple Mango Kale Smoothie

When I moved to Hawaii I assumed there would be an endless amount of coconuts all over the place because well, being an island and all, it’s what one assumes right? And then there are palm trees everywhere so I figured it was safe to imagine myself riding around the island drinking coconut water and eating coconut slices con chile y limón.

As it turns out coconut palms are palm trees but not all palm trees are coconut palms. Mind blown. If you already knew that then you deserve to live on this beautiful island and I beg that you teach me all that you know. But I still don’t feel like it explains why there are only a few places to buy fresh coconuts, I feel like there should be coconut fruit carts on every corner…con chile y limón of course.

But since we are ranting, or raving depending on what mood you’re in, about coconuts I feel like I should explain why in the world this delicious tropical smoothie includes coconut oil. The coconut oil will create a smoother texture in your smoothie and it’ll keep you full longer because of the fat (but don’t trip, it’s the good kind of fat that you should eat more of). Actually, consuming coconut oil (1-2 Tablespoons per day) could help you burn up to 120 calories more in a 24-hour period even without exercise. Coconut oil is also prime brain fuel and an immune system supporter so it’s definitely worth including in your meals.

If you live in a warm area your coconut oil might already be melted so it’ll blend with the other ingredients nicely. If your coconut oil is solid you can melt it in a pan while you blend the other ingredients together first and then add the melted oil and blend again. This smoothie can be made the night before but just know that the oil will harden a bit (which I don’t mind) but if you don’t like the texture/taste of it then enjoy this smoothie immediately after you make it.

Now time for some calorie burning, brain strengthening, immune boosting tropical sweetness!

Servings 2

Ingredients
  

  • 2 cups frozen pineapple
  • 1 cup mango
  • 2 cups kale
  • 2 cups water
  • 2 tablespoons coconut oil

Instructions
 

  • Using a high-speed blender blend all ingredients until smooth. Make sure at least one of the fruits is frozen for a cold smoothie. Enjoy!
