You know that go-to outfit that makes you feel warm and cuddly after a long day? Maybe it consists of sweatpants, fuzzy socks, a cotton tank top and an oversized off the shoulder sweater. Sounds like a pretty solid go-to right? I’m only a little embarrassed to admit that I have more than one of these “ensembles” so if you don’t consider that an outfit, feel free to scroll down the page and go straight to the recipe. That type of very casual, and necessary, outfit is to my wardrobe what this strawberry-coconut oatmeal is to my life: simple, comfortable and healthy. Fiber rich foods, like oatmeal, can help prevent a heart attack or stroke by lowering bad cholesterol levels (kinda’ like how lounging around in a comfy outfit can lower stress. and lower stress= happier heart).
Including oatmeal, because it’s delicious and to prevent heart disease, in your arsenal of recipes can be as simple and comfortable as slipping into your “casual” look. This strawberry-coconut oatmeal can be prepared the night before a busy day or for a morning spent lounging around in pure bliss. The simplicity of this recipe makes it a great option for a beginner to dive into the world of overnight oats or for a self proclaimed health foodie that needs a solid go-to breakfast option… *rolling up my oversized sweater and raising my hand*.
STRAWBERRY COCONUT OATS

- ½ cup old fashion oats
- ½ cup coconut milk
- ½ cup water
- 1 tablespoon maple syrup
- 1 cup strawberries sliced
- pinch of chia seeds
Instructions
- Place ½ cup oats, ½ cup coconut milk, ½ cup water and 1 Tablespoon maple syrup in a glass jar or container. Mix well and cover.
- Store in refrigerator overnight.
- When ready to serve top with sliced strawberries and sprinkle with chia seeds. (You can also top with strawberries and chia seeds the night before if you’re usually short on time in the mornings). Enjoy!
