Have you ever had cold cucumber slices drenched in lemon, Tapatío and sprinkled with salt? Mmmm, my mouth is watering as I type this. When I was younger (and just last week actually) I would drink the lemon and Tapatío juice left over after eating the cucumber slices. As kids my brother and I would fight over who would get more cucumbers and who would get to drink the sour lemon juice from the plate.
Well, this juice is not that.
Let me explain. The cucumber, spinach and celery juice found below is delicious and amazing in its own right. It’s just a different kind of delicious. Think more sweet and refreshing than sour and salty like the snack described above. Now your sense of taste is probably confused huh? Well, all the more reason to try this juice, your senses will surely need some closure.
The pineapple base is the perfect amount of sweetness combined with a hint of zing from the lime. The cucumber and celery, besides being anti-inflammatory green warriors, make this juice beautifully refreshing and light.
Who knew that so much green in one glass could taste so good?
- ½ medium pineapple
- 2-3 celery sticks
- 1 cucumber
- 2 cups of tightly packed spinach
- 1 lime, peeled
- Wash celery sticks, cucumber and spinach. Remove skin from lime and pineapple. Run all ingredients through your juicer.
- If enjoying right away, serve over ice. Or you can transfer juice to a covered jar or cup and place in refrigerator to get nice and cold. Enjoy!
